Dairy science applies biological and chemical principles to the production and management of dairy animals and to the production and handling of dairy products. Its instruction spans animal science, nutrition science, food science and technology, and biochemistry, together with the human and animal health and safety questions that dairying raises. The field treats milk production and dairy processing as one continuous chain, running from the management of the living animal through to the manufacture of milk based foods.
