Soil organic matter is the decomposed and decomposing plant and animal material in soil, which holds water and nutrients, feeds soil microbial life, and gives soil its structure and resistance to erosion, so its level is a widely used measure of soil health and long-term productivity. Intensive tillage and continuous cropping without organic inputs tend to deplete it over time, while practices that add crop residue, manure or compost and minimize disturbance tend to rebuild it.
