The staple grain of Asia and the daily food of more than half the world. Domesticated from wild grasses in the Yangtze basin, rice is unusual among cereals in thriving in standing water, which is why the flooded paddy, one of the most productive and labor-intensive farming systems ever devised, grew up around it.
