The variety and variability of the animals, plants and micro-organisms that feed us, at the genetic, species and ecosystem levels. It is agriculture's insurance policy and it is shrinking: as a few staples took over the world's fields, national diets converged by 68 percent between 1961 and 2009, while traditional staples such as sorghum, millets, cassava and sweet potato lost a third to half of their share. Seed banks, the Svalbard vault and the centers-of-origin collections exist to keep what remains.
