Garlic is a bulbous flowering plant in the genus Allium, closely related to the onion, shallot, leek and chives, native to Central Asia, northeastern Iran and the Himalayan foothills. It has been used for thousands of years as a seasoning and traditional remedy across many ancient civilizations, and China is today the largest producer by far.
