John Strong Niederhauser (1916 to 2005) was an American agricultural scientist who spent nearly 60 years in international agriculture and became known as Mr. Potato for his work advancing wider and more effective potato production and resistance to disease. He was awarded the 1990 World Food Prize for this leadership, and in part due to his contributions the potato ranks fourth in consumption among the world's staple foods, after wheat, rice and maize.
