A drought-tolerant root domesticated in South America and now a staple for hundreds of millions across sub-Saharan Africa and the tropics. Cassava grows in poor soil where grains fail, but its roots carry cyanogenic compounds and must be properly processed, a piece of food knowledge domestication carried with the plant.
