Lima Bean

Pulses

A legume (Phaseolus lunatus) domesticated independently in the Andes and in Mesoamerica, named for the Peruvian capital through which it was historically exported, and grown today across the tropics and in temperate regions as both a dry bean and a fresh shelled vegetable. Its broad, flattened seeds range from small and often bitter wild-type forms to the large, buttery-textured cultivars common in North American cooking. The crop is grown commercially in the United States, particularly for the frozen and canned vegetable market, as well as widely in Latin America, Africa and parts of Asia.
